Blueberry cake

Ingredients:
16 tablespoons coconut oil
Zest of 1 lemon + juice of half
2 cups sugar
4 eggs
1 teaspoon vanilla extract
1 cup sour cream
2 2/3 cups flour
1 teaspoon salt
2 cups frozen blueberries
Cream together wet ingredients until blended. Add in dry ingredients. Coat blueberries in 2 T flour and hand mix into batter. Pour into two greased 8 inch pans and bake 40-50 minutes until set in center.
Frosting:
Combine 2 cups blueberries with 1 cup sugar and cook 15 minutes.
Mix 1 package cream cheese, 1 stick butter, blueberry jam, and 32 oz powdered sugar. Mix until combined. Pour over warm cake and top with toasted coconut.
